After nearly 20 years, Oyster and Thistle has been graciously handed down to Chef Josh Van Hine, to reignite its vibrancy, while maintaining Elegance through Excellence guests have come to enjoy.

Locally Sourced Ingredients
Oyster and Thistle presents food that aims to celebrate our bountiful Skagit Valley with each and every changing season. From oysters to oxtails, brussel sprouts to strawberries, we are honored and delighted to support and serve our local farms.
Presence and Purpose
After growing up here in LaConner, Chef Josh graduated from the New York Culinary Institute of America in 2006, and has spent the last 20 years honing his skills in a variety of kitchens and cuisines. Being Chef of the Oyster and Thistle has fulfilled his dream of returning home and serving the community he loves.

We are thrilled to offer our upper dining and lower pub to host your celebrations, meetings and more, as well as on site catering through our sister company Simply Sound Catering.
Whether joining us in house for a reception dinner, or looking for a unique spread of houer D’ouves for your next event, we are able to meet many accomodations and curate the ideal menu around a shared vision.
